Some of the mesh packs I downloaded came with DDS files. What do I do with those?

Just simply ignore the DDS file. They are meant for nothing in particular :P

But they didn't seem to come with a mesh or material file. So how do I use them in FH?

Well then, I guess you don't need it. :) Maybe the person put it there by accident.
