I have been trying for HOURS to get clean lines on these ears, I need to know how people do it so easily, I can't get it right! No matter how much I try.

You mean the white stripes on the ears?
Sadly, for me, I hate stripes but they tend to be the markings I use the most.
It's kind of just to adjust the position of them. Change, go ingame and look, what happened, okay change a bit again, repeat.

Adding on to what Ressy said, keep in mind that the black guide/reference lines may appear smooth while in your art program, but in the game, you might find them to be totally stretched out. A good example of this is on the ears; any sort of markings are very difficult to do on them. However, eventually you'll get it, just don't give up!

Adding on to what the two lovely users above said, Depending on what program you use, it's important not to flatten the image to where the grid lines are now permanent on your preset. Use them as a different layer that you can delete or hide. I've done this when I was practicing with my own preset and forgot to hide my grid lines and instead, I flattened the image to make the file smaller. I hope this is the answer you were looking for, and I hope this helps as well.

I must add in case you're planning on making any markings around the eyes. The same issue will be there.
The markings will be stretched out and "deformed".
You'll most likely have to re-do those multiple times.

Yes, it appears that the ear UVs are not always the most convenient to work with. Sometimes you do not have to follow the lines, but rather, the shape of the segment UV.
These were the cleanest stripes I got on the "Sharp" ears.
And the UVs look like this:
With a little more polishing, they could be made even sharper and straighter, but I'll leave this resource if you want to use it on your preset.
