How to remove/alter polls?

I don't want to add any polls to my topics until I know if it's possible to remove/alter the poll(I don't want to have a word-breaking typo in my poll and be unable to fix it).

You just don't select them I'm pretty sure. Just follow through with making a thread as normal and completely ignoring the poll system.

Does that mean there's no way to edit/remove polls?

There is. Under your poll, you have a menu that allows you to lock the votes or edit the poll. You're allowed to edit the title, add/remove/edit questions, edit result visibility and reset the vote count to 0.
